Ik gebruik al jaren een vast recept voor pastasaus. Deze saus gebruik ik bij de penne of ik gebruik het als basis in de lasagne. Ik vind het ook een ideaal gerecht om al een paar dagen van te voren te koken. Meestal ben ik op donderdag pas laat thuis en daarom kook ik vaak al op dinsdag vooruit. De saus is dan al klaar en je hoeft er alleen nog maar een pasta bij te koken. De pastasaus kun je prima invriezen of een paar dagen in de koelkast bewaren.
Het is ook een ideale manier om restjes groentes op te maken. Je kunt er namelijk heel goed een eigen draai aangeven. Voeg bijvoorbeeld eens spinazie, plakjes wortel of olijven toe. Of gebruik eens champignons in plaats van gehakt. Zo krijg je echt een vullende saus met gezonde groentes. Het voordeel hiervan is dat je minder pasta nodig hebt om echt vol te zitten.
Wil je liever geen pasta met gluten of wil je minderen met de koolhydraten dan is deze rode linzen pasta misschien wel een goede optie. Ik heb er al een aantal keren mee gekookt en het is net of je gewone volkoren pasta eet. Leuk voor de afwisseling.
Ingrediënten (voor 2/3 personen)
– 1 ui
– 1 courgette
– 1 paprika
– 150 gram gehakt
– 1 pakje frito tomatensaus (of gebruik verse tomaten)
– 2 tl Italiaanse kruiden
– snuf paprikapoeder, komijn, kurkuma en laos
– peper en zout
Recept
– Begin met het wassen en snijden van de groentes.
– Fruit de ui met het gehakt.
– Voeg de gesneden courgette en paprika toe.
– Zodra de groentes zacht zijn kan de frito tomatensaus erbij.
– Breng op smaak met de kruiden en het peper/zout.
– Laat nog een kwartier zachtjes pruttelen.
– Serveer bij ongeveer 75 gram pasta per persoon.
– Eet smakelijk!
